- Toss broccoli on a baking sheet with a drizzle of oil, garlic powder, salt and pepper. Roast on the top rack until tender and browned, 15-20 minutes.
- While broccoli roasts, heat a drizzle of oil in a large ovenproof pan over medium-high heat. Add stuffed chicken and cook until golden brown, 2-3 minutes per side. Turn off heat and transfer pan to the middle rack. Bake until chicken is cooked through, 6-10 minutes. (If your pan isn’t ovenproof, transfer chicken to a second baking sheet.)
- To the pot with potatoes, add sour cream and 1 tablespoon butter. Mash with a potato masher or fork until smooth, adding splashes of reserved potato cooking liquid as needed. Season with salt and pepper. Keep covered off heat until serving.
- Divide mashed potatoes, roasted broccoli and stuffed chicken between plates. Top potatoes with remaining cheddar and scallion greens. Serve.
