- In a small bowl, whisk together apricot jam, miso sauce concentrate, juice from half the lime and 2 tablespoons water. Set aside.
- Pat salmon dry with paper towels. Season skin side with salt. Heat 1 tablespoon oil in a non-stick skillet over medium-high heat. Place salmon skin-side down and cook until skin is crispy and golden, about 4-5 minutes. Flip and cook 2 minutes more. Transfer to a plate.
- Reduce heat to medium. Add butter to skillet. Once melted, stir in ginger and white parts of scallions; cook 30 seconds. Pour in miso apricot mixture and bring to a simmer. Return salmon to pan, spoon sauce over fillets and cook 1-2 minutes until glazed and cooked through.

- Remove carrots from oven; toss with remaining lime zest and a squeeze of lime juice.
- Serve salmon over rice with carrots alongside. Drizzle any remaining sauce from pan over salmon. Garnish with scallion greens and lime wedges.
