Instructions

  1. Adjust an oven rack to the top position and preheat to 425°F. Wash and dry all produce. Peel the sweet potatoes and dice into ½-inch pieces. Place them in a medium pot and add enough salted water to cover by 2 inches. Bring to a boil and cook until tender when pierced with a fork, 15-20 minutes. (Covering the pot with a lid speeds up boiling.) Drain the sweet potatoes and return them to the pot; cover to keep warm.
  2. While the sweet potatoes cook, place 2 tablespoons butter in a small bowl and let it come to room temperature. Place the black peppercorns in a zip-close bag and crush them with a rolling pin or heavy-bottomed pan. Trim and discard the bottom 1 inch from the asparagus. Pick the sage leaves from the stems and finely chop until you have 1 tablespoon. Quarter the lemon.
  3. Toss the asparagus on a baking sheet with a drizzle of oil, salt and pepper. Roast on the top rack until browned and tender, 10-12 minutes.
  4. Meanwhile, pat the beef tenderloin filets dry with paper towels and season all over with salt and pepper. Heat a drizzle of oil in a large pan over medium-high heat. Add the beef and cook to your desired doneness, 4-7 minutes per side. Turn off the heat and transfer the beef to a cutting board to rest for at least 5 minutes. Wipe out any burned bits from the pan.
  5. While the beef rests, heat a drizzle of oil in the same pan over medium-low heat. Add ½ teaspoon of the crushed peppercorns (use 1 teaspoon for 4 servings). Cook, stirring, until fragrant, about 30 seconds. Stir in ¼ cup water (⅓ cup for 4 servings) and the beef stock concentrate. Simmer until the sauce thickens enough to coat the back of a spoon, 1-3 minutes. Remove the pan from the heat and stir in half the crème fraîche and 1 tablespoon butter (2 tablespoons for 4 servings) until melted and combined. Cover to keep warm. If the sauce is too thick, add a small splash of water.
  6. In the bowl with the softened butter, add half the maple syrup (all for 4 servings), half the garlic powder, 1 teaspoon chopped sage (2 teaspoons for 4), salt and pepper. Use a fork to stir until combined. (If needed, microwave the butter for 10-15 seconds to soften.) To the pot with the sweet potatoes, add half of the maple sage butter (reserve the rest for serving), the remaining crème fraîche, remaining chopped sage and remaining garlic powder. Mash with a potato masher or fork until smooth and creamy. Season with salt and pepper.
  7. If the asparagus has cooled, reheat it in the oven for 2-3 minutes. Slice the beef against the grain. Divide the beef, sweet potatoes and asparagus among plates. Spoon the sauce over the beef. Top the sweet potatoes with the remaining maple sage butter. Squeeze lemon juice over the asparagus and serve with the remaining lemon wedges on the side. (Beef is fully cooked when internal temperature reaches 145°F.)
