Instructions

  1. Preheat oven to 425°F. Wash and dry potatoes, then cut into wedges. Toss with 2 tsp oil, garlic powder, salt and pepper. Spread on a baking sheet and roast for 20-25 minutes, until golden and tender.
  2. Meanwhile, peel and slice carrots into ½-inch thick rounds. Toss with 1 tsp oil, salt and pepper. Spread on another baking sheet and roast for 15-20 minutes, until tender and lightly browned.
  3. Pat chicken cutlets dry and season both sides with Frank’s Seasoning Blend, salt and pepper. Heat 1 tsp oil in a large skillet over medium-high heat. Cook chicken for 3-4 minutes per side, until golden and cooked through (165°F internal). Remove from skillet and set aside.
  4. In the same skillet, reduce heat to low. Add butter, honey, Frank’s Hot Sauce and chicken stock concentrate. Stir until butter is melted and sauce is smooth. Return chicken to skillet, turning to coat in the sauce. Cook for 1 minute, then remove from heat.
  5. When potato wedges are done, sprinkle with pepper jack cheese and return to oven for 2-3 minutes, until cheese is melted. Serve chicken with cheesy potato wedges, roasted carrots and a drizzle of buttermilk ranch dressing.
