Instructions

  1. Cook ramen noodles according to package directions. Drain and set aside.
  2. While noodles cook, heat oil in a large pot over medium-high heat. Add sliced mushrooms and cook until browned, about 5 minutes.
  3. Add minced garlic and grated ginger to the pot. Cook for 1 minute until fragrant.
  4. Stir in soy sauce, hoisin sauce, pho stock concentrate, miso sauce concentrate and 4 cups of water. Bring to a simmer.
  5. Divide cooked noodles between bowls. Ladle the broth and mushrooms over the noodles.
  6. Top with crispy fried onions, sliced scallions and a drizzle of Sriracha to taste. Serve hot.

Recipe Tips

For extra protein, add cubed tofu or edamame.

If you can’t find pho stock concentrate, substitute with vegetable broth and a dash of star anise.
