Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Thinly slice the shallot and mushrooms. Dice the tomato into small pieces. Mince the garlic.
  3. In a small bowl, combine cream cheese, minced garlic, Italian seasoning and a pinch of salt and pepper. Stir until smooth; set aside.
  4. Heat 1 tablespoon butter and 2 teaspoons olive oil in a skillet over medium heat. Add the sliced shallot and cook, stirring occasionally, until softened and lightly browned, about 3-4 minutes. Sprinkle with ½ teaspoon sugar and a pinch of salt; cook 1 more minute. Transfer to a plate.
  5. In the same skillet, add 2 teaspoons cooking oil. Add the sliced mushrooms and cook until golden and tender, about 4-5 minutes. Season with salt and pepper. Remove from heat.
  6. Place the flatbreads on the prepared baking sheet. Spread the cream cheese mixture evenly over each flatbread, leaving a small border.
  7. Top with the caramelized shallots, cooked mushrooms and diced tomatoes. Sprinkle mozzarella cheese over the top.
