Instructions

  1. Preheat oven to 425°F with rack in top position. Wash and dry all produce. Dice potatoes into ½-inch pieces. Peel and mince garlic. Zest lemon, then quarter it. Pick and roughly chop dill fronds.
  2. On one side of a baking sheet, toss potatoes with a drizzle of olive oil, salt and pepper. Roast on top rack for 10 minutes.
  3. Remove sheet from oven. On the empty side, toss green beans with a drizzle of olive oil, salt and pepper. Return to oven and roast until vegetables are browned and tender, 12-15 minutes more.
  4. Meanwhile, pat chicken dry with paper towels. Season all over with half the shawarma spice, salt and pepper. Heat a drizzle of olive oil in a large pan over medium-high heat. Add chicken and cook until browned and cooked through, 3-5 minutes per side. Transfer chicken to a plate. Wipe out pan.
  5. Heat a drizzle of olive oil in the same pan over medium-high heat. Add garlic and cook until fragrant, about 30 seconds. Stir in stock concentrate, ¼ cup water and a pinch of salt and pepper. Bring to a simmer and cook until slightly reduced, 2-3 minutes. Remove from heat and stir in sour cream and a squeeze of lemon juice to taste.
  6. Toss roasted potatoes with half the dill and lemon zest to taste. Divide potatoes, green beans and chicken among plates. Top chicken with lemon cream sauce and sprinkle with remaining dill. Serve.
