Instructions

  1. Preheat the oven to 200°F if you plan to keep pancakes warm. Wash and dry the lemon. Zest the lemon and cut it into quarters. Place 2 tablespoons of butter in a small microwave-safe bowl and microwave until melted, about 30 seconds. Set aside for the pancake batter. Set aside 1 packet (about 2 tablespoons) of crème fraîche for the batter.
  2. In a small bowl, combine the remaining crème fraîche, 1/4 teaspoon lemon zest, 1/2 teaspoon sugar, a squeeze of lemon juice and a pinch of salt. Stir well and set aside for serving.
  3. Heat a medium pan over medium-high heat. Add the cherry jam and maple syrup. Cook until bubbling, 1-2 minutes. Turn off the heat and stir in 3 tablespoons of solid butter until melted. Add a couple of squeezes of lemon juice (save at least one lemon wedge for the batter) and a big pinch of salt. Set the syrup aside.
  4. In a medium bowl, whisk together the milk, ricotta, eggs, melted butter (from step 1), 1 teaspoon lemon zest, juice from one lemon wedge and the reserved crème fraîche. In a large bowl, combine the tempura mix, 1/4 cup sugar and 1/2 teaspoon salt. Pour the milk mixture into the dry ingredients and whisk until just combined (do not overmix).
  5. Heat a drizzle of oil in a large nonstick pan over medium heat. (You can use butter instead of oil for more flavor.) Drop about 1/4 cup of batter per pancake into the pan. Cook until bubbles form on the surface, about 1-2 minutes. Flip and cook until golden brown, 30-60 seconds more. Adjust heat if pancakes brown too quickly. Transfer cooked pancakes to a plate or a baking sheet in the oven to keep warm. Repeat with remaining batter, adding more oil between batches as needed. For faster cooking, use two pans or a griddle.
  6. Warm the cherry maple syrup over medium-low heat, stirring occasionally, for 2-3 minutes. Divide the pancakes among plates. Top with the warm syrup, sprinkle with walnuts and add a dollop of the lemony crème fraîche. Alternatively, set up a toppings bar with syrup, walnuts and crème fraîche in separate bowls and let everyone assemble their own stack.
