Instructions

  1. Preheat the oven to 425°F (220°C) and lightly oil a baking sheet. Adjust an oven rack to the top position (for 4 servings, also use the middle rack). Wash and dry all produce. Dice the potatoes into ½-inch pieces. Trim the woody ends from the asparagus. Finely chop the chives. In a medium microwave-safe bowl, melt 1 tablespoon of butter (2 tablespoons for 4 servings) in the microwave, about 30 seconds. Stir in the panko, half of the fry seasoning, half of the cheddar and salt and pepper to taste.
  2. Pat the chicken cutlets dry with paper towels and season with the remaining fry seasoning, salt and pepper. Place the chicken on one side of the prepared baking sheet (for 4 servings, spread across the entire sheet). Spread a thin layer of mayonnaise on top of each cutlet (you may not need all of it). Press the panko mixture onto the mayonnaise-coated tops to adhere; do not coat the undersides. Roast on the top rack for 5 minutes.
  3. While the chicken roasts, place the diced potatoes in a large pot and cover with salted water by 2 inches. Bring to a boil and cook until tender, 15-20 minutes. Reserve ½ cup of the potato cooking liquid, then drain the potatoes and return them to the pot. Keep covered off the heat. Meanwhile, cook the bacon in a large dry pan over medium-high heat, turning occasionally, until crispy, 6-10 minutes. Transfer to a paper-towel-lined plate. Once cool, roughly chop the bacon.
  4. After the chicken has roasted for 5 minutes, remove the baking sheet from the oven. Toss the asparagus on the empty side of the sheet with a drizzle of olive oil, salt and pepper. (For 4 servings, place the asparagus on a second baking sheet and roast on the middle rack.) Continue roasting until the asparagus is tender and the chicken is cooked through, 10-12 minutes more. For a deeper golden crust, broil the chicken for the last 2-3 minutes.
  5. Add the sour cream, remaining cheddar and 1 tablespoon of butter (2 tablespoons for 4 servings) to the pot with the drained potatoes. Mash until smooth and creamy, adding splashes of the reserved potato cooking liquid as needed. Stir in half of the chopped bacon and half of the chives. Season with salt and pepper.
  6. Divide the chicken, mashed potatoes and asparagus among plates. Top the potatoes with the remaining bacon and chives. Serve immediately.
