Instructions

  1. Preheat your oven to 425°F. Line a baking sheet with foil or parchment paper.
  2. Cut the broccoli into small florets. Toss with 1 teaspoon olive oil, salt and pepper. Spread on the baking sheet and roast for 15-20 minutes, until tender and lightly browned.
  3. While the broccoli roasts, cook the rice. In a small pot, combine 1/2 cup jasmine rice, 1 cup water and a pinch of salt. Bring to a boil, then reduce heat to low, cover and simmer for 15 minutes until tender. Remove from heat and let stand, covered, for 5 minutes.
  4. Zest and juice the lemon. Finely chop the chives.
  5. Pat the chicken cutlets dry with paper towels. Season both sides with salt and pepper.
  6. Heat 1 teaspoon cooking oil in a large nonstick skillet over medium-high heat. Add the chicken and cook until golden brown and cooked through, about 3-4 minutes per side. Transfer to a plate and tent with foil.
  7. Reduce the heat to medium. Add 1 tablespoon butter to the skillet. Once melted, stir in the chicken stock concentrate, 2 teaspoons Dijon mustard, lemon juice (to taste) and 1/4 cup water. Scrape up any browned bits. Simmer for 1-2 minutes until slightly thickened.
  8. Remove the skillet from heat. Stir in the sour cream and half of the chives. Season with salt and pepper to taste.
  9. Fluff the rice with a fork. Stir in the lemon zest and a squeeze of lemon juice.
  10. Serve the chicken over the lemony rice, spoon the creamy chive sauce on top and serve with roasted broccoli. Garnish with remaining chives.
