Roast on the top rack until veggies are browned and tender, 15-20 minutes. Tip: If broccoli finishes before sweet potato, remove it from the sheet and continue roasting sweet potato.
- Meanwhile, in a large bowl, combine the miso sauce concentrate, honey and a generous squeeze of lime juice. In a small bowl, mix mayonnaise with Sriracha to taste. Add water 1 teaspoon at a time until the mixture reaches a drizzling consistency.
- When the veggies are almost done, heat a drizzle of oil in a large nonstick pan over medium heat. Crack the eggs into the pan and cover. Fry to your desired doneness. Season with salt and pepper.
- Fluff the rice with a fork and season with salt and pepper. Add the roasted broccoli to the bowl with the honey miso dressing and toss to coat. Divide rice between bowls. Top with dressed broccoli and any remaining dressing from the bowl. Add sweet potato and fried eggs. Drizzle with Sriracha mayo and sprinkle with scallion greens. Serve with remaining lime wedges on the side.
