Instructions

  1. Cook the jasmine rice according to package instructions. Set aside.
  2. While the rice cooks, prepare the vegetables. Peel and julienne the carrot. Slice the zucchini into thin half-moons. Slice the mushrooms. Mince the garlic and grate the ginger. Thinly slice the scallions.
  3. In a small bowl, whisk together the soy sauce, white wine vinegar, sugar and half of the sesame oil. Set aside.
  4. Heat 2 teaspoons of cooking oil in a large skillet over medium-high heat. Add the carrot and cook for 2 minutes, then add the zucchini and mushrooms. Cook until tender, about 4 minutes. Remove vegetables from the skillet and set aside.
  5. In the same skillet, add the remaining 2 teaspoons of cooking oil. Add the ground beef, breaking it apart with a spatula. Cook until browned, about 5 minutes. Add the garlic and ginger and cook for 1 minute until fragrant.
  6. Pour the soy sauce mixture over the beef and stir to coat. Cook for 1 minute, then remove from heat.
  7. To serve, divide the rice among bowls. Top with the cooked vegetables and beef. Drizzle with sriracha and the remaining sesame oil. Garnish with sliced scallions. Mix everything together before eating.
